Monthong (Golden Pillow) is the dominant export variety from Thailand — it has a milder, creamier flavour profile than Chanee or Kan Yao and a higher flesh-to-seed ratio. For powder applications, Monthong produces a more consistent colour and flavour than mixed-variety or unspecified durian. Always ask your supplier to confirm variety.
MRL testing: what EU buyers must verify
Durian is subject to EU Maximum Residue Limits (MRLs) under Regulation (EC) No 396/2005. Any freeze-dried durian powder imported into the EU must comply with current MRL limits. Ask for a test report from an accredited laboratory covering the pesticide panel relevant to tropical fruit. Test reports should be per production lot, not generic.
Moisture and water activity: critical for shelf life
Durian powder is hygroscopic. Moisture above 3% or water activity above 0.30 significantly shortens shelf life and increases clumping risk. Verify these parameters from the CoA — not just the spec sheet limit.
